Cream Cheese Cookies
Ingredients
- 1 cup of Butter
- 3 oz. Cream Cheese
- 1 cup of Sugar
- 1 Egg Yolk
- 1/2 teaspoon of Vanilla
- 2 1/2 cup of Flour
Instructions
- Mix all ingredients together.
- Roll into 1” balls.
- Press fork gently into the top to create a crisscross effect.
- Bake at 375 degrees for 12-15 minutes.
Rolled Sugar Cookies (Cut-Outs)
Ingredients
- 5 cups of Flour
- 1/2 teaspoon of Cream of Tartar
- 1 cup of Butter
- 1 1/2 cup of Sugar
- 2 Eggs
- 7 tablespoons of Hot Water
- 1 teaspoon of Baking Soda
Instructions
- Sift the flour and cream of tartar together in a large bowl.
- Add butter and sugar to the bowl and work it together like pie dough.
- In a separate bowl, combine 1 teaspoon of baking soda and 1 tablespoon of hot water.
- Add 2 eggs, 6 tablespoons of hot water and the baking soda/water mixture to the large bowl.
- Mix well and roll thin with a rolling pin.
- Cut out cookies using cookie cutters to achieve desired shapes.
- Sprinkle with sugar.
- Bake at 375 degrees for 10-12 minutes.
Icebox Cookies
Ingredients
- 4 cup of Flour
- 1 cup of Sugar
- 1 cup of Brown Sugar
- 1 teaspoon of Salt
- 1 teaspoon of Cinnamon
- 1 teaspoon of Baking Soda
- 3 Eggs
- 1 teaspoon of Vanilla
- 1 1/2 cup Melted Shortening
Instructions
- Combine flour, sugar, brown sugar, salt, cinnamon and baking soda in a large bowl.
- Add 3 eggs, well beaten, vanilla and melted shortening. Mix well.
- Shape into 2” diameter logs and refrigerate for 24 hours.
- Remove from refrigerator and slice the log in cross sections approximately a 1/4 of an inch thick to create cookie disks.
- Bake at 350 degrees 10-15 minutes leaving space for the cookies to expand.
