One Lincoln Recipes – Christmas Cookies

Christmas cookie baking is a well-loved family tradition. Kelly and her Grandma Baceski have decided to open their family recipe book and share their traditions with you. Give these amazing family recipes a try and let us know how they turn out!

Cream Cheese Cookies

Ingredients

  • 1 cup of Butter
  • 3 oz. Cream Cheese
  • 1 cup of Sugar
  • 1 Egg Yolk
  • 1/2 teaspoon of Vanilla
  • 2 1/2 cup of Flour

Instructions

  1. Mix all ingredients together.
  2. Roll into 1” balls.
  3. Press fork gently into the top to create a crisscross effect.
  4. Bake at 375 degrees for 12-15 minutes.

Rolled Sugar Cookies (Cut-Outs)

Ingredients

  • 5 cups of Flour
  • 1/2 teaspoon of Cream of Tartar
  • 1 cup of Butter
  • 1 1/2 cup of Sugar
  • 2 Eggs
  • 7 tablespoons of Hot Water
  • 1 teaspoon of Baking Soda

Instructions

  1. Sift the flour and cream of tartar together in a large bowl.
  2. Add butter and sugar to the bowl and work it together like pie dough.
  3. In a separate bowl, combine 1 teaspoon of baking soda and 1 tablespoon of hot water.
  4. Add 2 eggs, 6 tablespoons of hot water and the baking soda/water mixture to the large bowl.
  5. Mix well and roll thin with a rolling pin.
  6. Cut out cookies using cookie cutters to achieve desired shapes.
  7. Sprinkle with sugar.
  8. Bake at 375 degrees for 10-12 minutes.

Icebox Cookies

Ingredients

  • 4 cup of Flour
  • 1 cup of Sugar
  • 1 cup of Brown Sugar
  • 1 teaspoon of Salt
  • 1 teaspoon of Cinnamon
  • 1 teaspoon of Baking Soda
  • 3 Eggs
  • 1 teaspoon of Vanilla
  • 1 1/2 cup Melted Shortening

Instructions

  1. Combine flour, sugar, brown sugar, salt, cinnamon and baking soda in a large bowl.
  2. Add 3 eggs, well beaten, vanilla and melted shortening. Mix well.
  3. Shape into 2” diameter logs and refrigerate for 24 hours.
  4. Remove from refrigerator and slice the log in cross sections approximately a 1/4 of an inch thick to create cookie disks.
  5. Bake at 350 degrees 10-15 minutes leaving space for the cookies to expand.
